Celiac disease is an illness caused by an immune reaction to eating gluten. Gluten is a protein found in foods containing wheat, barley or rye.

Gluten is in wheat, so it is in flour and in pasta. Fortunately there are other cereals that are gluten free and an increasing amount of products that are gluten free. Still is a challenge for the home cook!
