it’s Just Egg; if you want to make your own batter instead of store-bought, I would soak & blend mung dal, here’s an example recipe: https://www.veganricha.com/vegan-omelet-with-mung-bean-egg/

Whether home-made mung-dal or Just Egg, I add to the batter:

      • black salt (for eggy sulphur taste)
      • tiny amount of turmeric for extra color
      • garlic powder
      • onion powder
      • ground black pepper
      • small amount of asafoetida / hing for extra pungency and flavor

Not knowing Just Egg was a brand, I was really confused when I read that first part.

ha, that’s fair - I edited my comment to link to the company wikipedia, hopefully that helps with context, lol

I sorta feel like I shouldn’t mention brand names because it’s kind of a rule of this community (see rule 5 in the sidebar) - so in general I try not to link to brands and don’t bring them up unless someone asks to de-emphasize the brand name.

thanks! I make it occasionally, it wasn’t new. I usually make it a little differently each time, but the ingredients are mostly based around my partner’s tastes.
