Not to take away from the food looking delicious, but “tofu nuggets” sounds like something a polite vegan would yell as a curse word.

Basmati is definitely one of my favorites currently, especially for something like this where the rice shines by itself (with a little soy sauce)

I’ve never seen air fried stuff look so delicious like fried food. Any tips to get that crispy gold look and texture?

Panko and oil. I think some people are scared of putting oil in the air fryer since it’s meant to be ‘healthier’ and whatnot, but any excess falls to the bottom anyway. I personally err on the side of a bit too much oil; for this dish I poured some onto each individual piece at the beginning, and then again after turning them half way through the cook. It’s also a good idea to cook hot, my machine goes up to 200 C and I pretty much always use full blast.

Really the only thing I’ve struggled to get crispy is fresh fries, though I might just be overcrowding the tray.

You know that makes a ton of sense. I’ll give it a try next time I cook.

What are the proportions for making oatbuttermilk? Do you use white vinegar or something else?

It’s about 3.4% vinegar by weight. I mostly followed this recipe and used regular white vinegar

Thank you! I’m looking forward to trying it. It’s one of those flavor ingredients I’ve been missing.
