Red curry (jarred paste), coconut milk, with tofu and an assortment of frozen veg.
Honestly been looking to go more vegetarian/vegan and my old curry recipe used to use chicken.I really SHOULD just use tofu. What firmness of tofu?
Extra firm is probably best, you can press it further as well. I usually think of tofu as a paneer substitute than a meat substitute but if you press it or buy extra firm and rip it with your hands then fry it then it tastes really good, like how Richa does it in this video https://www.youtube.com/watch?v=DWohdoamOZE
I find mushrooms a good replacement too
I encourage mushrooms as additional to a meat replacement like tofu, seitan, or tempeh. Otherwise you might not get enough protein. It depends on the mushroom, but assuming it’s button mushrooms, they won’t give you similar amounts of protein as meat (whereas wine caps have more protein per gram than beef, but I’ve never seen them at the store, you have to grow those yourself).
Mixed bag of frozen veg is the goat. Saves so much time.
Fact!
Looks amazing AP! Am guest need slop
Road trip to AP’s! We can all bring goodies and eat delicious slop until our bellies are full and do drugs until our brains are empty!
everyone was arrested before the border
Please don’t make me break you guys out of jail, that probably won’t go over too well with the Mister. He’d rather I didn’t actually fight cops 🤷🏻♀️
Glad I’ve got curry ingredients lined up for tomorrow* (and food in the oven right now), this has given me a craving.
*Very similar recipe - tinned vegetables instead of frozen, and frozen chicken substitute instead of tofu. I don’t even cook it in a pan, but mix up a portion on a plate and bung that in the oven on a low heat to cook, then plop some microwave rice on top. You’re doing great.
How on earth was what I wrote here “not vegan”?? 🤦♀️🤦♂️
I’m sorry. I read frozen chicken. I will be more careful.
Easily done, you’re good 😊
We’re humans and a lot of people suggest actual chicken
Fair enough, no worries, I was just really confused. 😂
(E: I was worried maybe mentioning substitutes named after meats wasn’t allowed or something a little extreme like that 😬)
What we don’t really like and may be extreme is not mentioning actual brands but saying substitute or TVP is fine. The only reason we’re against brand names and trademarks is that we don’t want to become r/vegan like where the entire message board becomes brand recommendations and viral marketing instead of actual show and tell. I know we’re super small and its really far away from happening but that is the anarchist bent.
That seems perfectly reasonable tbh. Glad we cleared this up. 👍
