On FreeBSD, since v12 came out, it is now recommended to use zfs everywhere, including on virtual machines. I don’t know about linux.
My local cell tower is connected to the same street cabinet that my wired internet connection is connected to, and the speed of both of them is about the same.
My setup is: The nextcloud server itself - 4GB - I’m using Nginx instead of Apache Postgres server - 2GB - I use this instead of MariaDB/MySQL Redis server - 2GB Storage server - 32GB - I use this for storing the actual files, not the virtual machine images or database stores. Elasticsearch server - 4GB - this is optional, and I’m probably going to decommission it
All are running FreeBSD.
Performance is reasonably OK.

PiHole can be configured to use DoH, as can OpnSense and presumably other local DNS and router servers.
I’m not sure you could even run pihole on 512MB RAM.
I have a 10gb switch and a gigabit router. Traffic between the two computers attached to the switch that actually support 10gbe is at 10gb, traffic from them to the one that is 2.5gb is 2.5gb, and traffic to the internet is about 55mb, because that is all my internet does.
You can. In most cases, you can change the dc server location from localhost to whereever it is located. The benefit is that you use fewer system resources. The downside is that a failure on that database host has a bigger blast radius because it will affect everything that is using it.
If it is your own personal email server, then every country except the ones you visit on a regular basis, and if there is a country you visit on an irregular basis, then temporarily allow that country for the duration of your trip.
And the biggest disadvantage of IPv6 is that each of your internal devices has its own address and can be directly accessible from outside. So you need to completely rethink how you do security.

There was an update a while back that picked up my Green status on Twitter and applied it to my Mastodon account. My status on Reddit is neutral because I’m mostly posting there about tech stuff.
I have about 25 letsencrypt certificates on the same domain, so that is definitely not an issue.
