Something about the texture paired with the added salt makes them a superior topping. However I’ll admit it’s the only scenario in which canned mushrooms are better than fresh.

Gotta second this. The only exception I would maybe throw in there is sauteed fresh mushrooms. But that brings the texture more in line with canned. I don’t care for fresh onions either, while we’re on the topic.
Sauteed would absolutely be the best choice, but it’s not really a fair comparison. Raw mushrooms = little flavour. Canned mushrooms = some flavour, better texture. Mushrooms freshly sauteed in tasty fats = superior flavour, considerable effort.
I also agree. Raw mushrooms have tons of water and they don’t cook on pizza oven temperature and times and have the texture of paper. Ugh

This is a good argument. Fresh mushrooms sound great in theory, but they add too much liquid. Canned is better; fresh sauteed mushrooms even better.
As the owner of a pizza place for several years (we serve both fresh and canned) I can easily say Canned is the choice of most people.
I’d say it depends on what kind of shrooms are involved. The standard ones pizza joints use? Yeah, canned is better.
But if you’re shaking things up a bit, not only is canned rarely an option, but it reduces flavor when it is an option.
Everything sucks when you don’t know how cook it. Even the raw mushroom need some preparation. Place on top and pretend that heating is enough to make tasty don’t works so good.
Fresh =/= canned > none
Both are good. Different flavors, different textures.
