Why are collard greens called greens is it the color? And if so how come there is not a rainbow of different colored collards?

They’re not that green in color. Some are almost blue-black.

If you post a serious question on friday and are looking only for legitimate answers, then please include the [Serious] tag on your post. Irrelevant replies will then be removed by moderators.
