The correct term is fishmonger. Like a war monger of fish, playing both sides of the battle for profit.

No, no, a fish fighter would be just a fisher. A fisherman is a fisher fighter according to pure logic. What you are talking about is a fishman, not a fisherman.
One of my favorite Simpsons jokes is when bart refers to the “Fe-mailman” and lisa corrects him with “fe-mail carrier”.

Garbageman is also narrow/outdated imo. Municipal worker is more accurate (but can we still have municipalfighter?)
Municipal worker just means you work for a municipality (i.e. a city/town that has its own local government). Waste management, city hall workers, people that maintain local parks etc could all be municipal workers.
You could call them wastefighters?
